When Is Crawfish Season in Austin?

Crawfish season runs from late February through the end of May. This is the window when fresh, live Louisiana crawfish are available at their best, and it is the only time Chef Mike runs crawfish boils. If you have an event in mind during that period, booking early is strongly recommended — dates go quickly once the season opens.

What Makes a NOLA Kitchen Crawfish Boil Different?

Chef Mike grew up in South Louisiana, where crawfish boils are not a novelty — they are a way of life. He knows the difference between a crawfish boil that looks the part and one that tastes like the real thing. The seasoning, the timing, the way the pot is managed: these are details that come from decades of doing it properly, not from following a recipe.

Frequently Asked Questions

Do I need an outdoor space?

Yes. A crawfish boil requires outdoor space for the propane burners and the boiling setup. Backyards, ranches, lakeside properties, and open outdoor venues all work well.

How long does a crawfish boil take?

From setup to the last batch, expect the event to run two to three hours depending on group size. Chef Mike arrives early to get the water and seasoning going so the first batch is ready when your guests are.

What if some of my guests do not eat shellfish?

Let Chef Mike know when you book. He can advise on adding additional proteins or sides to make sure all your guests are well fed. Sausage, corn, and potatoes are already part of the boil.

How far in advance do I need to book?

As early as possible, particularly for weekend dates during peak season in April and May. Chef Mike places live crawfish orders in advance, so booking with at least two to three weeks of lead time is recommended.

Can NOLA Kitchen come to a venue outside Austin?

Reach out with your location and Chef Mike can advise on availability and any travel considerations. NOLA Kitchen serves the greater Austin area and surrounding communities.
